Oatmeal Berry Breakfast Bars

 Oatmeal Berry Breakfast Bars
Crust and Topping
1 c. flour
¾ c. brown sugar
½ tsp. salt
½ c. butter, cold and cut into small pieces
2 ½ c. quick-cook oats
2 Tbsp. apple or orange juice

Filling
¼ c. brown sugar
2 Tbsp. flour
Pinch of salt
3 ½ c. fresh blueberries, raspberries, or blackberries
1 Tbsp. lemon juice

Heat oven to 375 and grease a 9x13 baking pan.
Add flour, brown sugar, and salt to a food processor.  Pulse to combine, then add the butter and pulse 5 or 6 more times until crumbs form.  Add the oats and pulse a couple more times.  Remove 1 ½ c. of the mixture and set aside.  Add the juice to the remaining mixture and pulse a couple more times until it’s just moistened.  Press mixture firmly and evenly into the bottom of the pan using your fingers.  To make filling whisk together the sugar, flour, and salt in a medium bowl.  Add the fruit and lemon juice and gently toss together using a rubber spatula until the fruit is coated.  Distribute the filling over the crust. 
Sprinkle the reserved crumb mixture over the filling.  Bake the dish until golden 30-40 minutes.  Let the pan cool for about 2 hours then cut.
